One of the oldest cheeses produced in Sicily, Ragusano DOP is a spun paste cheese made from raw whole cow's milk. Its production is limited to the seasons when the pastures of the Ibleo plateau are particularly lush. Each Ragusano DOP has the typical parallelepiped shape of about 14/15 kg.

Ragusano DOP has a very pleasant taste, aromatic and sweet when the cheese is young, which gradually becomes more tasty when the aging period is prolonged.

The young Ragusano DOP goes very well with white wines, whereas when it is seasoned, its flavor is tasted with red wines. It is particularly suitable to accompany typical Sicilian wines such as Nero d'Avola, Merlot, Syrah, and Cerasuolo di Vittoria.
